    A good portion size, even better when your on the go and your busy. It's easy and quick to make.

    Ingredients
    Serves: 1 

    • 1/2 Cucumber
    • 1 Corn cob
    • 1 Spring Onion
    • 1 tsp Unsalted peanuts
    • 1 tsp Feta Cheese
    • 1/4 tsp Salt
    • 1/2 tsp Olive oil,
    • 1 small Pot
    • 5 cups Hot water

    Directions
    Preparation:5min  ›  Cook:3min  ›  Ready in:8min 

    1. Turn on the kettle and boil the water, Once boiled transfer water in pot. Turn on stove and put 1 corn cob in for 5 minutes.
    2. Chop spring onion, and also chop cucumber with skin on. Only use half a cucumber. Get a bowl and put cucumber and spring onion in bowl.
    3. Once corn cob is cooked transfer the cob onto the chopping board and cut down the corn to release the corn bits. Put the corn bits into the bowl.
    4. Put 1 tsp of feta in, don't for get to crumble it when putting it into the bowl.
    5. Put 1 tsp of chopped unsalted peanuts in. Put one 1/4 tsp of salt and 1/2 a tsp of oil
    6. Mix the salad.

    Tip

    Peanuts and feta are optional, they just add a crunch to the salad
