    A twist on the classic mashed potatoes, with cauliflower and carrots mashed right in. Seasoned with garlic, salt, pepper and parsley, it's an easy way to sneak in veggies.

    Ingredients
    Serves: 10 

    • 2 1/2kg potatoes, peeled and quartered
    • 300g cauliflower florets
    • 4 cloves garlic
    • 1 large carrot, peeled and diced
    • 1/2 cup skimmed milk
    • 50g butter
    • 1/2 teaspoon salt
    • 1/4 teaspoon ground black pepper
    • 1 tablespoon chopped fresh parsley, for garnish

    Directions
    Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Bring a large saucepan of salted water to the boil. Add potatoes, cauliflower, garlic and carrot. Cook until potatoes are tender but still firm, about 15 minutes. Drain.
    2. Add the milk, butter, salt and pepper. Beat or mash until smooth. Sprinkle with parsley and serve.

    ...I USED ONLY 1/5 OF POTATOES 500 GR + 300 GR CAULI KEPT THE REST THE SAME HOWEVER LESS MILK JUST A SPLASH ( ENOUGH FOR 4 SERVES) DELICIOUS - 16 Apr 2011

    Took shortcuts. Great flavour, quick and easy to make, and way more convenient than having to time/keep an eye on 3 pans of simmering veggies. I cooked the cauli and carrots in advance, warmed them quickly in the microwave when I was ready to use them, then added them to the hot potato. Couldn't have been easier.     Altered ingredient amounts. Loved this! I'm always looking for new ways to make mash and this was pure fun. I had to reduce the serving amount so I simply used 2 large potatoes, a large handful of chopped carrots and a third of a cauliflower with 1 large clove of garlic chopped. Just fantastic...thanks! - 08 Oct 2008
