Yummy Banana Walnut Muffins

    This is a great banana walnut muffin recipe; it is very moist, has a good flavor and is easy to make. This is a great healthy recipe for kid’s birthday parties. You can use ripe bananas but it has a better flavor if made with over ripe bananas because it add sweetness.

    Serves: 10 

    • 1 Cup (250ml) Vegetable oil
    • 1 1/3 Cups (295g) Caster sugar
    • 4 Eggs
    • 2 3/4 Cups (410g) Self-raising flour
    • 1 Teaspoon Bi-carb soda
    • 2 Cups( about five, over ripe) Bananas
    • 1 cup crushed walnuts

    1. Grease a muffin pan, place paper muffin cups in the pan.
    2. Combine all ingredients in the bowl of an electric mixter. Beat on low speed until just combined.
    3. Once combined, beat on medium speed until the batter is smooth.
    4. Pour into prepared muffin pan and bake for about 30 mins. Or until a skewer comes out clean.
    5. Stand for 5 min before turing out onto a wire rack to cool.
