Best Ever Potato and Bacon Soup

    A good old fashined soup, I found this recipe after my Nanna passed away in amongst her favourite recipes.

    Serves: 6 

    • 80 g Butter
    • 200g Bacon, diced
    • 2 Medium Onions or 5 leeks
    • 2 Cloves Garlic
    • 3 Teaspoons Fresh Thyme
    • 1 Bayleaf
    • 750g Potatoes, peeled and cubed
    • 6 Cups Chicken Stock
    • Salt and Pepper To taste
    • 1/2 Cup Sour Cream

    1. Melt the butter in a large saucepan over medium heat. Add the bacon, cook for 2 minutes.
    2. Add the onions and garlic, cook for 5 minutes, stirring regularly.
    3. Stir in the thyme and bay leaf, cook for 2 minutes.
    4. Add potatoes, stock and seasoning. Bring to the boil, then reduce heat and simmer for about 20 minutes until potatoes are tender.
    5. Remove soup from heat. Let cool slightly.
    6. Skim the top of the soup every 5 - 10 minutes.
    7. Once you have skimmed the soup, thin the sour cream with a little of the soup.
    8. Then stir sour cream mixture into soup. Taste and adjust seasoning.
    9. Reheat just before serving. Serve with fresh crusty bread. Enjoy


    I always leave the potatoes in chunks, it does break up a little but if you like a smooth soup you can put it into a blender.
