Coffee Date Rolls or Bread

    I am trying to recreate A rich bread flavoured with Coffee and dates that is sometimes available at a local bakery chain, and my wife reckons this is it.

    Serves: 5 

    • 2 cups plain flour
    • 2 teaspoons instant yeast
    • 3 Tablesoons butter
    • 2 Tablespoons sugar
    • pinch salt
    • 3/4 cup milk
    • 2-4 teaspoons instant coffee
    • 3/4 cup chopped dates
    • 1/2 cup sultanas or raisins
    • 2 teaspoons bread improver

    1. In a saucepan warm the milk and add the sugar, pour about a third of the milk in a small bowl and when cool enough put the yeast in and wait about ten minutes, until it is nice and frothy. Once you have taken the milk out for the yeast, add in the coffee and butter. Let it cool.
    2. Place the flour and bread improver in a mixing bowl
    3. Put Dates and Raisins in with flour; mix it a bit to spread the fruit evenly
    4. Add the by now frothy yeast mixture and stir a bit
    5. Add the Milk, coffee and butter mixture, till it forms a soft pliable dough
    6. Turn out on a lightly floured surface
    7. Knead by hand for ten minutes or so until smooth
    8. Place into a greased bowl, cover with a clean tea towel for an hour or so till it is about double the size, good time for a cup of tea now
    9. Once you are happy with the proofing, throw it on a lightly floured surface, punch down and either separate into about ten rolls or shape your loaf on a baking tray with some baking paper
    10. Let the rolls/bread sit for about 45 minutes, preheat oven to 180 degrees C towards the end of proofing time
    11. Brush with milk and scatter sesame seeds, if you are making bread put a few slashes in
    12. Bake for 15 to 20 minutes until golden brown.
