Tim's Grilled Chicken Wings (Kuku Choma)

    Chicken wings seasoned in a light and zesty marinade and grilled on the bbq. Perfect way to show off your bbq skill to your friends without spending all day at the bbq or a lot of money on expensive steak.

    Serves: 4 

    • 12 Chicken wings
    • 2 Lemons (juiced)
    • 1/4 cup Olive Oil
    • 2 cloves Garlic (pressed)
    • 1 tablespoon Onion powder
    • 1 tablespoon Paprika
    • 1 tablespoon All spice
    • salt and pepper to taste

    1. Place wings in a large heat proof dish that can be placed on the bbq at a later time. A dish with a lid is great but alfoil works also.
    2. Mix together all the remaining ingredients and rub over the wings to coat well. Tip all the liquid into the bottom of the dish and cover in fridge over night.
    3. Heat the grill on your bbq to high with the lid (or alfoil)on, place the dish on the grill and allow to boil for 15 minutes turning once.
    4. Take the dish off the heat and now place the wings themselves on the grill.
    5. Use the left over liquid and a spoon to baste the wings occasionally and turn regularlly to avoid burning (be careful as basting will produce a small flame, but you look cool doing it). Cook for 15 minutes or untill golden brown.

    Serving suggestion

    best served with grilled corn on the cob, rice and a cold beer.

    These were fantastic! I made the recipe exactly as written. I loved the bit of tang from the lemon juice and I really appreciated the allspice flavor since it is used quite a bit in my native French Canadian cuisine. I think next time I will add more garlic since it wasn't very prominent. Thanks for the great recipe Tim!  -  29 May 2013
