in a bowl combine sausage meat(slit sausage lengthwise with a sharp knife to remove skin),beef mince, chopped onion, 1 egg, garlic, sauces, parsley, mixed herbs, breadcrumbs and salt and pepper. Mix well to combine.
beat the remaining egg in a bowl.
take one defrosted puff pastry sheet and cut in half, brush each edge with egg, and place a portion of the sausage mix down the centre of the pastry strip (just place enough mixture so that you can roll the pastry over and seal the edges) leave the ends open. Take a sharp knife and cut the sausage roll in half then half again, brush with beaten egg and place on a baking tray seam side down, repeat with remaining pastry and meat mixture.
place sausage rolls seam side down on a baking tray,(allow a little space between them) and brush with beaten egg
bake for around 30 mins or until golden brown, serve with your favourite sauce or relish
