Onion and Artichoke Quiche

    This recipe is ideal for a busy weeknight dinner. Using prepared frozen shortcrust pastry makes this quick and easy. Serve with a green salad.

    Serves: 4 

    • 1/2 large onion
    • 1 tablespoon olive oil
    • 5 large eggs
    • 1/4 cup (60ml) milk
    • 1 large sheet frozen shortcrust pastry
    • 1/2 (400g) tin artichokes, chopped
    • 1 teaspoon caraway seeds
    • 1 cup (80g) grated parmesan cheese

    1. Remove the shortcrust pastry from the freezer to thaw.
    2. Preheat oven to 180 degrees C.
    3. Saute the onions in the olive oil in a saucepan on low heat. Cook the onions until they are very limp and translucent, about 10 minutes.
    4. In a large bowl, beat the eggs and milk. Set aside.
    5. Grease a 20cm round quiche dish. Line the dish with the shortcrust pastry and remove any excess pastry.
    6. Arrange the artichokes, onions and caraway seeds in the dish and pour in the egg mixture.
    7. Top with the parmesan cheese and bake in the oven for approximately 50 minutes.

    This is a great recipe for the whole family. You can omit the caraway seeds if you have fussy kids who may find the taste too strong. I like to bake two quiches at once so I can freeze one for another day.  -  24 Apr 2012
