Rutherglen Relish

    Great way to use up home grown tomatoes. Makes a great gift and is also good for street stalls and fetes. It is an old family recipe.

    Makes: 6 jars approx

    • 2.5kg ripe tomatoes chopped
    • 4 large onions chopped
    • 500gms sugar
    • 1 tbls mustard
    • 1/4 tsp cayenne pepper(optional)
    • 1 handful salt
    • to cover vinegar

    Preparation:15min  ›  Cook:15hours  ›  Extra time:12hours pickling  ›  Ready in:1day3hours15min 

    1. Place tomatoes in large bowl. Put onions on top. Sprinkle with salt. Let stand over night.
    2. Drain off liquid, put everything in a large pot, cover with vinegar. Boil for about 1 1/2 hours.
    3. Can thicken with corn flour if desired. Ladle into hot jars and seal.
