    This is a hearty pasta salad with roasted pumpkin and is a perfect side dish for a lazy afternoon BBQ.

    Ingredients
    Serves: 4 

    • 1 small butternut pumpkin, peeled and halved with seeds removed
    • 1 red capsicum, whole
    • 1 red onion, peeled
    • 2 tablespoons olive oil for roasting
    • 1 1/2 cups cooked pasta (shell or similar)
    • 2 tablespoons chopped dill
    • 1 tablespoon toasted sunflower seeds
    • 1 teaspoon Dijon mustard
    • 1 tablespoon olive oil
    • 1 tablespoon white wine vinegar
    • 1 teaspoon honey

    1. Drizzle the pumpkin, capsicum and onion with olive oil and roast in a 400 degrees C oven for about 1 hour and then allow to cool.
    2. Chop the pumpkin, onion and capsicum roughly and combine in a large bowl.
    3. Stir in the pasta, dill and sunflower seeds.
    4. Whisk the mustard, olive oil, vinegar and honey together to make the dressing.
    5. Stir dressing through salad and serve warm.
