Duck Salad

This is one of the things I make with leftover duck when I roast one. It's simple, but really delicious. You could probably make it with chicken and turkey but I haven't tried.

Ingredients
Serves: 2
- 250g picked duck meat (two handfuls)
- 100g bean sprouts
- 1 handful coriander leaves
- 1/4 cup rice wine vinegar
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- 1/2 teaspoon white sugar
- freshly ground black pepper
- 4 leaves romaine lettuce

- Mix the duck meat, bean sprouts and coriander. Tear up the lettuce leaves and divide between two bowls.
- In a separate bowl, whisk together the dressing ingredients.
- Toss the salad with the dressing, then arrange over the lettuce leaves.
Tip
The quantities I have given for the salad ingredients are approximate, I just try to achieve a nice balance between the ingredients.
