In a glass bowl mix sausage mince,breadcrumbs,onions,herbs and salt&pepper
Now break up mixture into two equal amounts,and roll into long lengths to suit width of puff pastry.Take out puff pastry and lay one sheet down on board and cut in half.Place mixture on pastry keeping approximately 15mm back from front edge and then fold pastry over mixture.With a fork slightly press on edge to seal pastry.Trim edge to tidy up.
Cut rolls into appropriate sizes and make sure you use a sharp knife that is wet and wipe off excess mixture from knife as you cut.Place into tray with grease proof paper and apply egg yolk and water mixture to sausage rolls and making sure you keep sausage rolls apart on tray.
Place into hot oven at 170 degrees fan forced for 25 minutes or until golden brown.
You may add grated carrots and peas or anything else you desire to mixture.And finally you can sprinkle poppy seeds on top of sausage rolls after coating with egg and water mixture.
