Thai Chicken Balls with brown rice.

    Serves: 3 

    • 500 g minced chicken
    • 50ml dried bread crumbs
    • 2 spring onions,finely sliced
    • a half tablespoon ground coriander
    • 50 ml fresh coriander
    • 2 tablespoons sweet chilli sauce
    • 1 tablespoon fresh lime juice
    • 1 tablespoon peanut oil
    • 1 small mild fresh chilli
    • 1 teaspoon fresh ginger
    • 1 clove fresh garlic

    Preparation:25min  ›  Cook:15min  ›  Ready in:40min 

    1. In a glass bowl,mix together chicken and breadcrumbs.Add spring onions and season with ginger,garlic,ground coriander and fresh coriander,lime juice,chilli and chilli sauce,mix all ingredients really well.
    2. With damp hands,shape mixture into small balls and place on plate.(you may place in fridge over night)
    3. Warm the peanut oil in a large pan over a medium heat gently turning to cook evenly.


    Cut finely some fresh basil to garnish on plate and have a condiment dish of sweet chilli sauce to accompany meal.And cook 1 cup of brown rice.
