Fried eggplant chips (or crisps).
Makes: 1 serving
1 large Eggplant
or 4-5 small Eggplants
to taste Seasoning
- Cut eggplant into fairly thin rounds.
- Brush both sides with oil/fat of your choice.
- Place eggplant in pan or on grill and cook 5-10 minutes per side (depends on size and thickness of rounds).
- Toss with whatever seasoning you want.
It is important to note that the thicker the eggplant rounds are, the quicker they will lose their crispness.
