Greek pasta with minced meat - Macaronia me kima

    I'm sure that most of you know Italian spaghetti with Bolognese sauce. Here we are going to prepare a Greek version of spaghetti with minced beef. In Greece, they really like it and they cook it very often (once a week or twice a month). The recipe is really fast with simple ingredients but great taste.

    Serves: 6 

    • 500 grams (1 pound) ground beef or veal
    • 1 big red onion roughly chopped
    • 1/3 cup olive oil
    • 1 small bay leave
    • 1 small cinnamon stick
    • 250 grams (about 9 oz) can chopped tomatoes
    • 1 tablespoon of canned tomato paste
    • 1/2 cup dry white wine
    • 1/2 cup water
    • 1 pinch sugar
    • 1/2 teaspoon pepper
    • 1/2 teaspoon salt
    • 500 grams (1 pound) dried spaghetti
    • 1 tablespoon salt
    • 2 tablespoons olive oil

    1. Heat the olive oil in heavy large pot over high heat. Add the ground beef and brown well on all sides, about 5 minutes. During this time, mix it well with a big wooden spoon. Add the onions and wait for another 3 minutes.
    2. Stir in the tomato paste plus 1 pinch of sugar and 1 minute later pour and the wine and season well. Add the spices plus the chopped tomatoes. After 5 minutes, reduce the heat and pour the water in the pot. Cook at moderate temperature for 30 minutes. If more water is needed, add it during the cooking process. Taste if more salt is needed.
    3. Bring a large heavy pot of salted water to the boil. Add the spaghetti, mix once in the beginning and stir, do not let it become very soft.
    4. We want it to have a bit of bite (al dente). Drain the pasta. Place in a large bowl. Sprinkle with 2 tablespoons of olive oil. Mix very gently. Serve with the minced meat sauce, grated cheese (kefalotyri or parmezana) and a glass of dry white wine.
