Scrambled eggs with cheese and tomato - Strapatsada

Strapatsada is a very popular recipe in Greece. It can be served as an appetizer , main dish or breakfast. It is easy, quick and of low cost.

Serves: 2 

  • 6 eggs
  • 200 grams (7 ounces) can chopped tomatoes
  • 150 grams (5 ounces) feta crumbled
  • 2 tablespoons of olive oil
  • 4 tablespoons of milk
  • 1 pinch of sugar
  • 1 pinch of black pepper
  • 1 pinch of salt

  1. Beat the eggs gently and add the milk.
  2. Heat the oil in a pan and place the chopped tomatoes with the pinch of sugar. Cook at moderate temperature for 10 minutes or until there is no liquid left.
  3. Sprinkle with salt and pepper and pour the eggs in. Stir the ingredients together in constant motion. When curds start to form, add the cheese. The curds should be soft and the end product creamy.
