This is a small batch of sauce that will make one small bottle worth. I put it together after realising I didn't need bottles and bottles of the stuff sitting around.Its tangy and has a hint of warmth and spice to the sweetness of the plums.Goes well with chicken, fish or as a dip for chips.

Makes: 1 small Bottle or three baby jars worth

  • 560 grams Black plums
  • 20 grams Brown sugar
  • 230 grams White sugar
  • 300 ml White Vinegar
  • 1 Clove
  • 1 cm Green Ginger
  • 1/2 teaspoon Mixed spice
  • 1 pinch Cayenne pepper

Preparation:10min  ›  Cook:25min  ›  Ready in:35min 

  1. Wash plums and cut in half leaving the stones in them.
  2. Crush green ginger slightly and add to a saucepan.
  3. Add plums , mixed spice , cayenne,clove,vinegar and the sugar to the saucepan.
  4. Bring to the boil stirring until sugar is dissolved.
  5. Boil plums until stones come away and the flesh is totally mushy.
  6. Boil up jars or jar in a saucepan of boiling water for 5 mins.
  7. Put plum mixture into a metal sieve over a bowl and remove ginger root and clove.
  8. Work plum mixture through sieve until only the stones are left.
  9. Pour sieved plum mixture into hot jars or bottle straight out of the boiling water and seal with lid or Jam covers.
  10. Wipe down jars or bottle and allow to cool and store in a dark cool place. Once opened store in the refrigerator.

not bad but must be used sparingly as it is very sweet . next time i will cut down on the sugar - 18 Mar 2012
