This is an Asian themed pesto I invented which adds Vietnamese mint (also called Vietnamese coriander) to the basil and substitutes peanuts for pine nuts.
1 handful Vietnamese mint leaves, chopped
1 handful fresh basil, chopped
1 clove garlic, sliced
12 raw peanuts
1 teaspoon Vietnamese fish sauce
splash olive oil
- Combine all the ingredients in a mortar and pestle and pound until well blended. Add just enough olive oil to dampen it. Serve over spaghetti or as a dip.
Vietnamese mint or coriander can be found in Asian shops. It's also very easy to grow.
