This is an Asian themed pesto I invented which adds Vietnamese mint (also called Vietnamese coriander) to the basil and substitutes peanuts for pine nuts.
Combine all the ingredients in a mortar and pestle and pound until well blended. Add just enough olive oil to dampen it. Serve over spaghetti or as a dip.
Tip
Vietnamese mint or coriander can be found in Asian shops. It's also very easy to grow.
