Vietnamese Pesto

    This is an Asian themed pesto I invented which adds Vietnamese mint (also called Vietnamese coriander) to the basil and substitutes peanuts for pine nuts.

    Serves: 2 

    • 1 handful Vietnamese mint leaves, chopped
    • 1 handful fresh basil, chopped
    • 1 clove garlic, sliced
    • 12 raw peanuts
    • 1 teaspoon Vietnamese fish sauce
    • splash olive oil

    Preparation:10min  ›  Ready in:10min 

    1. Combine all the ingredients in a mortar and pestle and pound until well blended. Add just enough olive oil to dampen it. Serve over spaghetti or as a dip.


    Vietnamese mint or coriander can be found in Asian shops. It's also very easy to grow.
