Chinese Tea Eggs

    Tea eggs are a treat that you eat on Chinese New Year. They are quite striking and easy to make, perfect for kids.

    • 4 eggs
    • 1/2 cup soy sauce
    • 1 cinnamon stick
    • 1 tablespoon Sichuan peppercorns
    • 1 teaspoon star anise
    • 1/2 teaspoon Chinese five spice

    1. Place the eggs in a small saucepan and cover with a few centimetres of water. Bring to the boil and simmer three minutes, then take the eggs out and cool them under running water, but don't throw out the water in the saucepan.
    2. Take a teaspoon and crack the shell of the eggs all over. You want to make spidery cracks all over, but you don't want to break the shell completely open.
    3. Return the eggs to the saucepan and add the remaining ingredients. Bring the liquid back to a simmer for about 45 minutes. Take the saucepan off the heat, cover it and let it steep overnight in the refrigerator.
    4. Drain the eggs and carefully peel away the shells. Happy new year!
