Slow cooker Spicy Lentil and Tomato soup.

    A lovely hearty, thick soup for cold winter days. Absolutely no fat, so you can have a mug of this soup any time of the day and not put on an ounce of weight. I used this soup when I was de-toxing for a week and never felt hungry. I made double the amount and was enough for the weeks de-tox. I lost 2 kg in the first week!

    Makes: 4 servings

    • 125g split red lentils
    • 1 medium onion
    • 1 large carrot
    • 1 can chopped tomatoes
    • 1 vegetable stock cube
    • half to 1 teaspoon chilli powder
    • pinch sea salt
    • pinch ground black pepper

    Preparation:15min  ›  Cook:7hours  ›  Ready in:7hours15min 

    1. Add the lentils to the slow cooker.
    2. Peel and finely chop the onion.
    3. Peel and finely chop the carrot.
    4. Add the onion and carrot to the slow cooker.
    5. Add the can of chopped tomatoes and two canfuls of water.
    6. Add the crumbled stock cube and salt and pepper to taste. Finally, add the chilli powder. If a milder taste is desired then halve the quantity or more if you like it really spicy.
    7. Place lid on cooker and turn on to high heat and cook for an hour. Reduce the heat to low and cook for another 6 hours.
    8. When time is up, ladle into bowls and serve with crusty bread if required.
