Homemade Creamy Tomato Soup

    Tomato soup is so much better if you go to the small amount of trouble of making your own! Serve with cheese on toast for the perfect comfort food meal. You can also make it vegetarian by using vegetable stock.

    Serves: 2 

    • 6 ripe tomatoes
    • 2 tablespoons butter or olive oil
    • 3 cups (750ml) chicken stock
    • 1 cup (250ml) milk (or light cream)
    • celery leaves or parsley sprigs, for garnish

    1. Finely chop the tomatoes.
    2. Heat the butter or oil in a heavy saucepan and saute the tomatoes until they are mushy. Add the chicken stock and simmer 20 minutes.
    3. Puree the soup in a blender, then return it to the saucepan. Add the milk and reheat. If you want it extra rich, add some more butter to finish.
