Fish and Chips Pizza

    This sounds bizarre but I swear it works! Thinly sliced potato, anchovies and malt vinegar work to create the perfect fast food fix. I use premade frozen pizza dough to save time, but you could also use a pre-cooked base or make your own.

    • 1 pizza dough or premade base
    • 1/2 cup strained tomatoes or passata
    • 1/2 cup mozzarella cheese
    • 1 small potato
    • 8 anchovy fillets
    • malt vinegar, to taste

    1. If using frozen dough, allow dough time to come to room temperature. Roll out dough to quite thin on a floured counter. If it keeps shrinking, give it a minute or two to rest and roll out again. Heat a large frypan, and put in the pizza dough without any oil. Cook a few minutes or until black spots are forming on the bottom, then flip and cook a few minutes more. If using a premade base, omit this step!
    2. Using a mandoline or a very sharp knife, slice the potato as thinly as you can. You probably won't need the whole potato! Meanwhile, preheat the grill.
    3. Spread the base with the strained tomatoes or passata to within a couple of centimetres of the edge. Sprinkle mozzarella over.
    4. Layer the mozzarella with the potato slices, then lay as many anchovy fillets over as you like. You can also sprinkle over a fresh herb like marjorum.
    5. Grill the pizza until the potatoes are translucent and the crust is blackening in places.
    6. Slice the pizza and bring it to the table, with a bottle of good malt vinegar on the side. Each person sprinkles as much vinegar as they prefer over their slice.
