Chicken and Spinach Parcels

    These parcels are perfect hot or cold. These are the best for parties and special occasions. Serve with dipping sauce.

    Makes: 20 

    • 1 large chicken breast
    • 250g frozen/ fresh spinach
    • 250g bacon/ ham bits
    • 1 medium red capsicum
    • 3 sheets puff pastry
    • 4 tablespoons butter/marg melted

    Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Wash hands, put on apron and tie hair up. Chop up the chicken, spinach and capsicum.
    2. Add oil to a frying pan and let it get really hot. Add the chicken and cook until cooked and lightly browned.
    3. Add the spinach, bacon and capsicum until all cooked and soft.
    4. Once that is cooked put it aside to prepare butter. Melt the butter in the microwave.
    5. Cut puff pastry into about 3-4cm by 3-4cm pieces and brush with melted butter.
    6. Put a little of the chicken mixture into the middle of the pastry and pull the sides of the pastry up to cover it all then put a toothpick through to hold it together.
    7. Repeat this until all the chicken mixture is gone.
    8. Put them in a preheated oven at 180 degrees C and cook for 30 mins or until golden. Serve with a dipping sauce straight away.


    If you want to make more use more pastry and more chicken.
