Cut the avocados in half, pop out the pit and scoop out the flesh into a bowl.
Crush the garlic and add it to the bowl. Squeeze the lemon and add the juice, then mash it all together until smooth. Taste, and if necessary add more lemon.
Finely chop the onion and add it to the avocado. You might want to use less onion for your own personal taste. Finely chop the tomato and add that too.
Mash it together, but make sure there are still some decent-sized chunks of onion and tomato. Cover with cling wrap to prevent the surface from discolouring and put in the fridge an hour to allow the flavours to blend. Serve with corn chips for dipping.
