Chocolate Oat Rum Balls

    A delicious, treat that I often make for special birthday occasions, or the big family Christmas gathering. Definitely a treat for the adults, though you could make it family-friendly, by leaving the oats and rum out. Suitable for freezing, to eat at a later date!

    Makes: 50 but could be more or less, depending on size

    • 2 cups rolled oats
    • 300ml Bacardi rum
    • 1.5kg chocolate chip biscuits
    • 1 cup icing sugar
    • 6 tablespoons cocoa powder
    • 500g dark chocolate
    • 200g butter
    • 200g sweetened condensed milk
    • Extra desiccated coconut

    1. Soak oats in rum for minimum 2 hours - if you can, leave them overnight.
    2. Process biscuits, and mix in sifted icing sugar and cocoa powder.
    3. Melt chocolate, butter and sweetened condensed milk.
    4. Pour wet ingredients over dry and stir all together.
    5. Shape into balls and roll in coconut.
