Prune and Banana Muffins

    These are so healthy with prunes and bananas, plus each muffin has less than 5 grams fat! Unlike the reputation of healthy recipes, these taste great.

    Serves: 12 

    • 100g caster sugar
    • 60ml vegetable oil
    • 1 egg
    • 225g (1 cup) mashed ripe banana
    • 1 teaspoon vanilla essence
    • 190g plain flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 1/4 teaspoon salt
    • 1/4 teaspoon ground cinnamon
    • 170g diced pitted prunes

    1. Preheat oven to 180 dergrees C. Grease and lightly flour a 12 whole muffin tray or line with muffin cases.
    2. In a large bowl combine sugar, oil and egg, then beat until smooth. Blend in banana and vanilla essence.
    3. Combine the flour, baking powder, bicarb soda, salt and cinnamon in a bowl then stir into egg mixture until just combined. Fold in the prunes.
    4. Spoon mixture evenly between the muffin tray holes. Bake in the preheated oven for 20 to 25 minutes, or until a wooden skewer inserted into the centre of a muffin comes out clean.

    These little gems have become a favorite breakfast. I make a selection once a week ,freeze and they are retrieved, defrosted and heated for a luscious feed on the run. I have used full fat milk, the banana is black or over ripe so very sweet,flour was wholemeal and I reduced sugar to 50gms . I also added cinnamon and nutmeg.A fitting recipient of 5 stars.  -  14 Jan 2014


    Great recipe, but I'm a chocoholic so I added White choc bits. And halved the oil, Very yummy, maybe just not as healthy, but life is short and choc is what is. Enjoy.  -  27 Jun 2015


    I made a no-sugar version that turned out really well. Here's how you can do it: put 10 prunes in a measuring cup and fill with water to the 3/4 cup level. Microwave for 3-4 minutes until boiling and then let it sit for 5 minutes. Puree this and use it instead of the sugar. I also reduced the oil to just 2 Tbs.
