Paleo Pancakes (Gluten Free)

    Paleo eating is a healthy lifestyle choice. Paleo foods are gluten free, grain and wheat free, dairy free, full of natural healthy fats and proteins. Here is a great Paleo pancake recipe to tickle your tastebuds. All ingredients can be found in your local supermarket.

    Makes: 2 Large thick pancakes

    • 2 large free range eggs
    • 1/2 cup unsweetened apple sauce
    • 1/2 cup cashew nut butter (health food aisle. Do NOT use peanut butter)
    • 1/4 teaspoon pure vanilla extract
    • 1/4 teaspoon cinnamon powder
    • 1 tablespoon nut oil (NOT peanut. Try macadamia or hazelnut)

    1. Put all of the ingredients except the oil into a large mixing bowl and stir with a wooden spoon until you have a failry consistent batter.
    2. Add a dollop of hazlenut oil to a small-medium non stick flat fry pan and let the oil heat.
    3. Add some pancake mixture to the pan and spread over the pan with your wooden spoon to make a flat thin pancake. It is a thick mixture that cooks qiuckly.
    4. Flip the pancake after a minute and brown the other side.
    5. Once all pancakes are made, serve them with your choice of toppings.

    Serving suggestion

    I served my pancakes with thinly sliced apple, fresh blueberries and 100% maple syrup. It was absolutely delicious!!
