Hot Spinach Dip

    This is a spinach dip that even kids will eat. It can be made with reduced fat cheese and cream to lighten the calories. Great for picnics and the BBQ.

    Serves: 12 

    • 2 (200g) finely chopped frozen spinach, defrosted
    • 2 (200g) cream cheese at room temperature
    • 200g cream (does not have to be thickened)
    • 1 packet cheap French onion soup (has more salt)
    • 200g firm feta cheese, diced 10mm
    • 1 cobb loaf

    1. To a 5 litre pot add the spinach and cook on low till well heated but still has plenty of liquid, then add French onion soup to the pot and continue to cook while stirring, till onion pieces are soft.
    2. Next add the cream cheese and continue to stir until it starts to boil. Since you are looking for a dip add cream till desired constancy is achieved, then continue heating till very hot but not boiling. Remove from heat and add the chopped feta gently folding it into the dip.
    3. Slice the top off the cobb loaf and scoop out the soft bread leaving the crust to be used as the bowl. Pour the hot dip in and serve with the soft bread broken up around the outside as scoops.

    Use low fat cream and cheeses will help with the calorie count
