almond rice cookies

    Delicious gluten free cookies that even people who don't have a gluten problem gobble up. I can no longer tolerate almonds and eggs but am posting it for people who can. When I couldn't find any 100% rice bread I used to eat these for breakfast. Sorry no photo, I haven't eaten them for years. I can't actually remember how many the recipe made but think it was at least 10.

    Makes: 10 or more

    • 125g ground almonds
    • 1/3 cup rice flour
    • 4 egg whites
    • 1/4 cup castor sugar
    • 5tbs marge or butter
    • 1 tsp vanilla

    Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

    1. Preheat oven to 120 degrees. Mix almond meal, sugar and egg whites (unwhipped) into a paste. Then add vanilla and flour.
    2. Melt the butter then beat it into the mix which should be fairly runny.
    3. Lay patty cake cases on a baking tray and pour in the mixture, at least half way up each case. Alternatively use one of those biscuit tins with hollows in it and grease the hollows and dust with flour.
    4. Bake for 7 to 10 mins until they start to slightly brown. Allow to cool before eating. I stored them in the fridge.
