A simple, effective and ever so yummy chilli that will feed the whole family.
I cook this frequently for friends and family and it always goes down a treat =)
This recipe is made to a medium heat to suit most pallets.
Heat some oil in a large pan, add vegetables and cook on a medium heat for 3-4 mins.
Add salt, pepper, spices, tomatoes and kidney beans. Stir and cook for 3 mins.
Break up mince and add to pan (no need to brown first)fill 3/4 of kidney bean can with water and add. Add balsamic vinegar and crumble in two stock cubes - stir well.
Leave to simmer for 2 hours stirring every 20-30 mins.
Serve on a bed of rice, with tortilla chips, or even a jacket potato.
The exact recipe can be used in the slow cooker on low for 8hrs.
For those who don't like a lot of spice, half the quantity of the spices. I personally tend to double it but i understand that's not to everyone's taste =)
