You really can't go wrong with these simple yet effective muffins! Why not swap the jam for chocolate spread and pop a few chocolate drops on top? The possibilities are endless with these little gems - ENJOY!
In a large bowl, combine flour, sugar, baking powder and salt.
In a small bowl, lightly beat eggs; add milk, butter and lemon peel. Pour into dry ingredients and stir just until moistened.
Spoon half the batter into 6 greased or paper-lined muffin cups/tins Make a well in the center of each; add jam. Spoon remaining batter over jam. Bake at 220 degrees c for 20-25 minutes or until golden.
Mix it up a bit by swapping the fillings - great fun =)
