Roast Pork with Chilli

Cubes of tender pork fillet are rubbed with a mix of chilli powder, salt, cumin, garlic and coriander then roast in a hot oven until cooked but still tender.


Serves: 10 

  • 2 tablespoons chilli powder or to taste
  • 1 teaspoon salt
  • 2 1/2 teaspoons ground cumin
  • 2 cloves garlic, crushed
  • 1 tablespoon chopped fresh coriander
  • freshly ground black pepper to taste
  • 1 kg whole pork fillet, trimmed and cut into cubes

Preparation:10min  ›  Cook:2hours  ›  Extra time:45min marinating  ›  Ready in:2hours55min 

  1. Mix together: chilli powder, salt, cumin, garlic, coriander and pepper in a bowl. Coat pork cubes with mixture and set aside for 45 minutes in refrigerator.
  2. Preheat oven to 110 degrees C. Place pork in a baking tray.
  3. Bake in preheated oven for 2 hours, or until edges of pork are crispy.

Something else. while it was a little short on instructions, this is what I did: I used a shallow pan with a little olive oil on the bottom to prevent sticking and cooked it for a little less than 2hr- probably 1h40mins- DELICIOUS!!- Thanks for sharing- our two year old even liked it and she hates everything. I served it with a couple of steamed veggies on the side. I'm making it later this week for dinner guests. - 29 Sep 2008


Something else. I've made this several times, and both my husband and I really enjoy it now. However, the first time I made it, I followed the recipe exactly and the pork dried out. Now I cook it for about 1/3 less time than indicated - fabulous over rice! - 29 Sep 2008
