Deliciously moist and smokey chicken at about 1/2 the cost of shop bought chicken. You just require a hooded BBQ or similar, to transform an ordinary chicken into an extra-ordinary bird to eat hot or cold. Victoria, Australia

Serves: 5 

  • 3/4 cup cooking salt
  • 1 cup brown sugar, honey or maple syrup
  • 2 litres cold water

Preparation:18hours  ›  Cook:2hours  ›  Ready in:20hours 

  1. Brine mix will suit a chicken up to about 1.5 kg.
  2. Prick the chicken all over deeply with a sharp fork. Soak in the brine for 18 hours in a Ziplock style bag or glass bowl in the fridge.
  3. Soak some woodchips (redgum, hickory or mesquite) in water overnight, then place into a BBQ smoker box or heavy pouch of aluminium foil (prick two small holes in the pouch).


The probe thermometers take the guesswork out of meat internal temperatures; eliminates raw internal meats.
