Chewy Anzac Favourites

Makes: 16 

  • 1 Cup Rolled Oats
  • 1 Cup Plain Flour
  • 1 Cup Brown Sugar
  • 1/2 Cup Unsweetened desiccated coconut
  • pinch Salt
  • 1 Cup Butter (1/4 pound - 1 stick)
  • 1 tablespoon Golden Syrup
  • 1 teaspoon Bicarbonate of Soda (Baking Soda)
  • 2 teaspoons Boiling Water

Preparation:15min  ›  Cook:12min  ›  Extra time:3min  ›  Ready in:30min 

  1. Preheat oven to 180C(350F)
  2. Mix rolled oats, flour and coconut together in a large mixing bowl
  3. In a small saucepan over medium heat melt butter, golden syrup and brown sugar together. Stir until smooth in consistency.
  4. In a small bowl add 2 tsp of boiling water to 1 tsp of bicarbonate of soda (baking soda).
  5. Add bicarbonate of soda mixture to butter mixture while frothing. Stir so that butter mixture is frothing.
  6. While butter mixture is frothing add to dry ingredients and stir to mix into a dough. Dough should be sticky to touch.
  7. If mixture is tight add a tbsp of warm water (up to 3 tbsp)to mixture so that mixture is sticky.
  8. Using a teaspoon spoon balls of dough onto a greased baking tray (or baking paper) leaving room for mixture to spread.
  9. Place baking tray in oven and cook for 12-15 min until biscuits have spread and are golden brown.
  10. Remove from oven and cool on baking rack.
