Gluten, egg, dairy free recipe that I grew up with, very easy and you can add different ingredients to have a change.

Serves: 6 

  • 4 potatoes, peeled and diced
  • 2 rashers bacon, diced
  • 1 brown onion, diced
  • 1 handful sunflower seeds
  • 2 tablespoons chopped parsley

Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Place diced potatoes in a steamer and cook until just soft.
  2. Cook onion and bacon in a little olive oil in a frypan until browned.
  3. Once potatoes are cooked place into large bowl. Add cooked bacon and onion and drizzle with a little olive oil. Add sunflower seeds and parsley and mix with a large spoon until combined. Tip mix into serving bowl and enjoy.
  4. Can use chives and spring onion instead of the brown onion (don't need to cook them either). Can omit sunflower seeds or change for sesame seeds. Mix in whatever you like :)
