This easy and quick recipe is great on lazy weekends and just as good before work, or in the kids case, before school. If your child can operate a microwave then they can do this!

Serves: 1 

  • 1 egg
  • olive oil spray

Preparation:1min  ›  Cook:1min  ›  Ready in:2min 

  1. In a medium sized, microwave safe mug spray the bottom with olive oil.
  2. Crack an egg into the mug.
  3. Cover with paper toweling so that the paper can be tucked underneath the mug.
  4. Place the mug in a microwave, making sure the towel is tucked underneath the mug. Microwave on high for 40 seconds making sure the mug is completely covered.
  5. Serve on a slice of buttered toast for a quick and easy breakfast.


Make sure the mug is covered as it will explode all over the microwave if it is not.

A quick and easy breakfast for both adults and older children to prepare. I placed the egg in a large ramekin and then poked the egg yolk several times with a toothpick, which helped with the popping and splattering, but I still covered it with a paper towel. The only thing this needs is a little salt and pepper. - 01 May 2013
