Quick & easy Sunday night soup

I can't be bothered 'cooking' most Sunday night's so I whip up this little gem. It's filling and tastes amazing with garlic bread.

Makes: 4 decent sized bowls

  • 1 teaspoon oil
  • 1 Medium sized onion
  • 1 clove of garlic (or 1/2 teaspoon garlic paste)
  • 1 pinch dried chilli
  • 1 220gm tin beans (any type you like - I use butter beans and baked beans)
  • 1 220gm tin crushed or diced tomatoes
  • 3 boiled eggs

Preparation:5min  ›  Cook:15min  ›  Ready in:20min 

  1. Get a small saucepan fill with water and place 3 eggs into it. Put on stove to boil. When boiling time for 3 minutes and then take off the heat. Put boiled eggs to the side.
  2. Roughly chop up your onion and garlic.
  3. Add oil into a medium saucepan and gently saute onion and garlic.
  4. Add pinch of chilli and saute for a further minute.
  5. Open tin of tomatoes and empty into saucepan.
  6. Open tin of beans (rinse if necessary) and empty into saucepan. Simmer gently for 5 minutes.
  7. Cut up eggs and place into bowls. Pour soup mixture over eggs and serve!
  8. This soup goes excellently with either plain buttered toast or garlic bread....
