Fluffy Banana Pancakes

    The reaction between the bananas and the buttermilk combined with the baking powder makes these super fluffy.

    Serves: 10 

    • 2 cups (500ml) buttermilk
    • 2 eggs
    • 1 cup (125g) plain flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 cup mashed bananas

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Whisk together the buttermilk and eggs in a bowl until evenly blended; set aside. Stir together the flour, baking powder and salt in a separate large bowl. Make a well in the centre of the dry ingredients and stir in the buttermilk mixture and mashed bananas, being careful not to over mix the batter (the batter will be lumpy). Let the batter sit for at least 1 minute before using.
    2. Heat a large frying pan over medium-high heat and coat with cooking spray. Pour 1/4 cupfuls of batter onto the pan and cook until bubbles appear on the surface. Flip with a spatula and cook until browned on the other side.

    Yum!!! First time I have made Banana Pancakes. This recipe was perfect.  -  05 Jul 2015


    Okay, 5 stars based on how I made them. Cut the buttermilk to 3/4C, used 1.25C flour, 1.25t baking powder, four bananas and about 1/2T honey. Really, really good; lots of banana flavor, moist and fluffy. This made about 12 6" pancakes. Next time, I may add some oatmeal as well.  -  17 Oct 2010  (Review from Allrecipes USA and Canada)
