Smoked Sturgeon Pasta Casserole

    Tuna casserole may be the ultimate comfort food, but my recipe jazzes it up a little with the aid of tinned smoked sturgeon and homemade croutons.

    Serves: 2 

    • 2 cups macaroni
    • a few slices stale baguette or other crusty bread
    • 1 tin (300g) condensed cream of mushroom soup
    • 1 tin (185g) smoked sturgeon, drained and flaked
    • 1/2 cup (or more) grated cheddar
    • 1/2 cup (125ml) milk
    • 1/4 cup grated parmesan cheese
    • chopped coriander or parsley for garnish

    1. Cook the macaroni in boiling salted water until just al dente. Drain. Meanwhile, preheat oven to 180 degrees C.
    2. Coarsely chop the bread and sprinkle on a baking tray. Cook in the oven until the croutons are slightly crunchy, but not browned.
    3. In a casserole dish, combine macaroni, soup, fish, cheddar, milk and mix well. Sprinkle croutons and parmesan on top.
    4. Bake covered for 15 minutes, then uncovered for 15-20 minutes, until top is starting to brown. Garnish with coriander or parsley.


    You can smoked sturgeon at fishmongers or import stores. In a pinch, smoked salmon or trout works too.
