Pasta with chicken and mushroom cream sauce (recipe from Family Circle).

Serves: 4 

  • 300g chicken breast fillets
  • 1 can (250g) mushrooms, sliced
  • 2 rashers bacon, cut into thin strips
  • hot salami as desired
  • 1 handful chives, chopped
  • 1 white onion, fine chopped
  • 3 cloves garlic, crushed
  • 1 tablespoon olive oil
  • 30g butter
  • 1/3 cup white wine
  • 2/3 cup cream
  • 1 tablespoon plain flour
  • 2 tablespoons water
  • 200g pasta
  • 1/3 cup grated parmesan cheese
  • salt and ground black pepper to taste

  1. Cut chicken into thin strips.
  2. Heat oil and butter in frying pan, add chicken and cook over medium heat until browned.
  3. Add bacon, garlic and mushrooms, cook over medium heat for 2 minutes, stirring occasionally.
  4. Add white wine and cook until liquid has reduced by half.
  5. Add cream and chives and bring to boil.
  6. Blend flour with water until smooth. Add to pan and stir over heat until the mixture boils and thickens, reduce heat and simmer for 3 minutes.
  7. Season to taste.
  8. Cook pasta in the large pot of rapidly boiling water with a little oil and salt added.
  9. Drain.
  10. Add pasta to sauce and stir over low heat until combined.
  11. Sprinkle with parmesan.
  12. Serve immediately with a green salad.

Other ideas

Any type of dried or fresh pasta can be used.

I used fresh mushrooms and forgot to thicken with the flour but it worked out really well - 21 Feb 2012
