This is a very simple and hearty soup with plenty of flavour. Leftovers are even better the next day for lunch. If turkey is not available use chicken mince.

Ingredients

  • 1 1/2 teaspoons olive oil
  • 500g minced turkey
  • 1 onion,peeled and chopped
  • 500ml (2 cups) water
  • 1, 700g jar passata (tomato) sauce
  • 1,400g can kidney beans, drained, rinsed and mashed
  • 3 cloves garlic, crushed
  • 3 teaspoons mild chilli powder or to taste
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cayenne pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Preparation method

Prep: 15 minutes | Cook: 45 minutes

Heat the oil in a large saucepan over medium heat. Place turkey in the pot, stir and cook until evenly brown. Stir in onion, and cook until transparent

Pour in the water. Mix in passata sauce, kidney beans and garlic. Season with chilli powder, paprika, oregano, cayenne pepper, cumin, salt and pepper. Bring to the boil. Reduce heat to low, cover, and simmer 30 minutes.

Used different ingredients. This recipe was fantastic, though I added my own touches... Used a can of mild chilli beans besides the kidneys, and mashed half of each can. Added a 125g can of mild green chillies. Also diced half a green capsicumand did not cook it or the onion until all the ingredients were mixed. Cut the water in half to make it thicker and heartier, and added a dash of cinnamon. We are definitely saving this recipe - it is the best we've tried so far! Edit: I've made this a second time now, this time in the slow-cooker. We did not change anything except to add a little more water. We left it on low for the day (8 hrs).

Used different ingredients. Yummy. I substituted half of theturkey mince with firm tofu (which I left under a weight to drain extra water and then crumbled). I like my chilli to be thick so I reduced the water to 1 cup. I didn't think it was very spicy so I added another 1/2 Tablespoon of chilli powder.

Used different ingredients. My wife just loved it... To avoid it being too soupy I added a can of chilli beans in addition to the kidney beans. To give it a more unique flavour I added: 1/2 teaspoon nutmeg 1/4 teaspoon cinammon 2 seeded and chopped jalapenos 1 seeded and chopped green capsicum. I also suggest using red onion instead of a white onion. Enjoy!!!

Altered ingredient amounts. Great recipes with these adjustments. Sauteeed chopped onion and minced garlic in olive oil. Then added ground turkey. Cooked with a montreal dry steak seasoning I use with turkey. Added in a little extra tomatoes, left out water & chilli powder, added double the cumim, and two tablespoons of brown sugar. Simmered for 2 hrs (checking taste and adjusting seasonings slightly if needed) and served with shredded cheese and crackers for friends and my son. Was *gone* and had recipe requests afterwards. I so adore this site!
