Spinach Bacon and Avocado Salad

    This is my husband's favourit salad and he loves salads

    Serves: 4 

    • 250g Young spinach leaves
    • 1 Avocado
    • 2 Hard boiled eggs shelled and cut into 8ths
    • 3 tbsns French dressing
    • 1 tbspn Olive oil
    • 175g Rindless bacon cut into strips
    • 1 Small clove garlic chopped fine
    • 1 tbspn Cider vinegar
    • 250g Croutons

    1. Trim stalks from spinach and put leaves into salad bowl.
    2. Halve the advocado remove skin and slice into a small bowl. Toss in the french dressing until well coated. Add to spinach
    3. Fry the bacon in the olive oil until brown then add the chopped garlic. Fry for a further minute.
    4. Remove bacon from pan with a perforated spoon and toss into salad.
    5. Add the cider vinegar to the pan and stir to dissolve any juices, then pour over salad
    6. Arrange the egg slices and croutons over salad. Enjoy.

    Serving suggestion

    I sometimes sprinkle tasty shredded cheese over instead of croutons.
