    Fresh spinach leaves are tossed with shelled peas, olive oil, lemon juice and crumbled feta cheese to create a quick and easy salad with a one of a kind flavour.

    Ingredients
    Serves: 4 

    • 300g spinach
    • 150g shelled peas
    • 4 tablespoons olive oil
    • 1 1/2 lemons, juiced
    • 130g feta cheese, crumbled
    • salt and freshly ground black pepper, to taste

    1. In a large bowl, toss together the spinach, peas and olive oil until evenly coated. Add the lemon juice, feta, salt and pepper then toss again.

    Altered ingredient amounts. Very easy. Took suggestions & used less lemon juice & olive oil. We might try adding some bacon in next time for a change. - 29 Sep 2008

    Just made this and it was quite nice, I also added a couple of sliced hard boiled eggs and that filled it out a bit. Next time I will use baby spinach leaves and will add anchovies to the salad. - 11 Nov 2012
