    Broccoli and Chesse twice Baked Potato By Sue (Recipe from Natalie's Killer Cuisine)

    Ingredients
    Serves: 2 

    • 2 large Potatoes
    • Olive Oil and Salt, to coat
    • 1 1/2 TBS Butter
    • 1/4 cup Sour Cream
    • Salt, to taste
    • Black pepper, to taste
    • 1/2 cup Cheddar Cheese ,shredded
    • 1/2 cup Broccoli Florets
    • 2 cloves Garlic,crushed
    • 1/2 onion
    • 1pc Ham
    • 1/4 cup spicy salami,chopped

    Directions
    Preparation:10min  ›  Cook:1hour30min  ›  Extra time:30min cooling  ›  Ready in:2hours10min 

    1. Preheat oven to 170 degrees Poke a few holes in the potato with a sharp paring knife. Coat in olive oil and salt. Bake uncovered for apx 1 hour. Let cool at least 30 minutes before handling
    2. Slice off top quarter of potato. Scoop out as much of the potato as you can without breaking the skin and place in a bowl.
    3. Add the butter and sour cream to the mashed potato, and mash until everything is melted, and smooth. Add the salt and pepper,garlic,onion,ham,spicy salami and combine
    4. Add the cheddar cheese and broccoli pieces to the mashed potato, and place back inside the skin gently. Top with a little more cheese, and bake for 30 minute.Enjoy.
