Baked Capsicum with Rice

    Very tasty, similar to my other baked eggplant recipe, but with capsicum, and not vegan. Option for spicy or substitute mince or chilli con carne for brown rice, very easy to make, about 30 mins cooking time max!

    Serves: 1 

    • 1 Capsicum (halved seeds removed)
    • salt and pepper
    • 1/3 Cup Kidney Beans
    • 1/2 Cup Brown Rice
    • 2 tsp paprika
    • 2 tbls salsa
    • sprinkle cheese (fetta, mozarella)
    • 6-8 Cups Water
    • 1 Tomato (sliced)
    • sour cream (to serve)

    1. Preheat the oven to 180. Place Halved capsicum on baking tray place in oven.
    2. Whilst capsicums are in oven, cook brown rice by absorption method on stove with 6-8 cups of water. Takes about 20 minutes.
    3. 0nce the rice is cooked, add beans and paprika, simply stir through, and spoonfuls of rice mix into halved capsicum bowls. Top with 3-4 slices of tomato, salsa and sprinkle with cheese.
    4. Place in the oven for a further 10 minutes. Serve with sprinkled paprika and sour cream!


    Use mince instead of rice

    Make it healthier

    Dont use sour cream or cheese if you would like a vegan or healthier option.
