Basic Italian Tomato Sauce

    It's always good to keep some basic tomato pasta sauce in the freezer. You can use it over pasta, in lasagne or on pizza. Delicious and simple.

    Serves: 6 

    • 3 tablespoons olive oil
    • 4 cloves garlic, crushed
    • 4 (400g) tins whole peeled tomatoes
    • 280g tomato paste
    • handful chopped fresh parsley
    • 2 teaspoons salt
    • 1/2 cup (125ml) red wine

    Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

    1. In a large saucepan, warm olive oil over medium low heat and add garlic; cook for a few minutes, making sure to not brown the garlic.
    2. Stir in tomatoes and paste and cook over medium heat for 10 minutes. Add parsley, salt and wine. Reduce heat to low and simmer, stirring occasionally, until sauce thickens.

    This is a great sauce particularly becacuse it's not runny. The extra freezes well and complements bread sticks.  -  08 Oct 2008


    Quartering the tomatoes so that they melt into the sauce is an improvement, but this is an excellent sauce.  -  08 Oct 2008
