    This is just a simple pasta dough, the measurements are quite approximate so if the dough is too sticky add flour, and if it is too dry add either another egg or just some water. It will take some adjusting depending on your flour and the size of your eggs.

    • 500g plain flour
    • 5 eggs
    • semolina flour, to dust

    1. First start by making a mound of flour. You‘ll want to do this on a smooth surface. Then make a well in the centre and add your eggs.
    2. Now you just need to knead your dough, as before if it’s too dry add water or egg, if it’s too sticky add flour. You might just need to keep adjusting. Keep kneading the dough until it become slightly elastic and bounces back when you poke it, otherwise the dough will not form a nice pasta.
    3. Once the dough seems ready wrap it in cling wrap (so that it won't dry out) and leave it to sit for at least an hour.
    4. After an hour, you‘re ready to roll it out. Dust your work surface with the semolina flour, making sure it’s evenly spread. Then roll the dough out, making sure to roll in different directions and to get the dough even. I‘d say that when finished the dough should be around 2-3 millimeters.
    5. Now your basic dough is complete! slice it up to make tagliatelli or fill it and make tortellini and enjoy!

    According to my experience it´s better to use just egg yolks. The dough is softer then and more tasty. - 19 May 2012
