When you don't know what to cook or have little time, this is a great tasting dish the whole family loves. It all just gets thrown in together and is quick and easy.

Serves: 6 

  • 2 cups penne pasta (or any pasta)
  • 1 can tuna
  • 1 can pineapple pieces
  • 1 cup frozen peas
  • 1 can corn nibblets
  • 1 onion, chopped
  • 1 cup cashews or peanuts
  • 1 teaspoon chilli flakes
  • 1 cup coconut cream

Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

  1. cook pasta and chop the onion.
  2. heat electric frypan and add small amount olive oil.
  3. cook onion till golden, add tuna and pineapple and corn all with their juice. Add cooked pasta and all other ingredients and cook through. Add coconut cream and simmer for a few minutes.
  4. Serve with toast or garlic bread, or on its own.

A great simple, tasty and inexpensive meal. Just a small increase in ingredients fed a family of five no worries. I used mixed herbs instead of oregano at the beginning but folded in fresh parsley and oregano at the end. I also added a smidge of grated Parmesan cheese and lemon juice... - 06 Nov 2015
