Ouma Hester’s Melktert (Grandmother Hester’s Milk Tart)

    A lip smacking variation on the traditional South African legendary milk tart. Ouma Hester has shared this recipe countless times. The Dutch origins of the Melktert recipe can be traced back to the sixteenth century. The recipe is a real winner. It is enjoyed with coffee or tea, or as a desert, and very easy to prepare.

    • 1/4 cup sugar (for crust)
    • 3 tablespoons margarine (for crust)
    • 1 egg (for crust)
    • 1 cup flour (for crust)
    • 1 teaspoon baking flour (for crust)
    • 1/2 teaspoon salt (for crust)
    • 6 cups milk (for filling)
    • 2 tablespoons margarine (for filling)
    • 1 cup suger (for filling)
    • 3 eggs (for filling)
    • 5 tablespoons flour (for filling)
    • 5 tablespoons corn flour (for filling)

    1. Crust: Mix sugar and butter Add egg and beat well Add flour, baking powder and salt Mix well, roll out and put into pie pans Bake till light brown
    2. Boil together the milk and margarine for the filling
    3. Mix together the sugar for the filling, eggs, flour and corn flour. Pour into hot milk mixture, stir till the mixture thickens (method similar to custard)
    4. Pour into crust, sprinkle with cinnamon and place in the refrigerator to cool for ca one hour.
