Spaghetti and Rat Meatballs

    How to make dinner fun? With rat meatballs! (while the spaghetti sauce is filled with chunks of vegetables.) Always a favourite and requested for sleepovers.

    Serves: 6 

    • Spaghetti Sauce
    • 1 tablespoon oil
    • 500g mince
    • 1 large onion, diced
    • 2 zucchinis, diced
    • 1 capsicum, diced
    • 6 large button mushrooms, sliced
    • 1 jar of your favourite pasta sauce
    • Meatballs
    • 500g mince
    • 2 eggs
    • mixed herbs (optional)
    • To Serve
    • 250g spaghetti
    • 1/4 cup frozen peas
    • 1 carrot, sliced
    • 1/2 cup grated cheese

    1. Spaghetti Sauce: In a large saucepan on a medium heat add the oil then the mince; stir until almost all brown.
    2. Add the onion and stir. Leave cooking until the onion starts to soften.
    3. Add the zucchini, capsicums and mushrooms; stir. Pour in the jar of pasta sauce. Leave to simmer while preparing the meatballs.
    4. Meatballs: Break up the mince then combine with the egg and mixed herbs.
    5. Create rat shaped meatballs and place on an oven tray. Place in an oven at 180 degrees C. Cooking time varies based on the size of your 'rats' but 15 minutes is a good first check time.
    6. To Serve: Boil the spaghetti according to the packets instructions. Heat the peas and carrots in the microwave.
    7. On each plate create a bed of spaghetti, scoop over the pasta sauce, add the rat then the accessories with pea eyes and carrot ears. Garnish with cheese.
